What a pool hall needs that a shop till cannot do
An ordinary POS assumes the thing you sell is on a shelf and the sale is over in a minute. A billiards hall breaks all three assumptions: the sale starts when the balls are racked, ends at an hour nobody knows yet, and the kitchen has been taking orders against that table the whole time. These are the parts that have to be built in rather than bolted on.
Hourly table billing, priced by day and hour
A rate profile sets what an hour costs across the week, so a Tuesday afternoon and a Friday night are different prices on the same table. Rates can be charged per table or per player, with a minimum charge, rounding to the nearest five or fifteen minutes, a grace period before the clock really starts, and a cheaper rate once a session runs long. Four ways to sell an hour

Table lights that switch themselves

Shift and drawer reporting that stands up
Shifts open with a float and close with a count, and whoever counts the drawer is not shown what the till expects to be in it — knowing the figure turns counting into matching.
